they will most likely be plucked from where they stand by helicopters.

Its called single stemming and they are "plucked" from the stump by a helicopter (S-64E / F). There are tables for each tree species and by bottom diameter that tell the faller how much holding wood to leave so that the helo can snap it off. The helicopter has a grapple attachement on the end of the long line. The tops are taken sometimes also - but not always! It is the nice clear - high grade pieces they are after.....red / yellow cedar and Doug-fir.
 
So they top the tree, then the chopper comes and lifts the remaining stick out like a crane? How do you cut it? Cut as chopper lifts, or do you put some sort of breaking cut on the stump?

anything that can be hand felled is, and the other trees that make grade are climbed, topped and jigged. jigging is just putting two kerf cuts with enough holding wood left to keep the tree standing, but enough taken away that the helicopter can snap it off the stump and fly it. in the video the show a guy jigging at 1:58.
