Chainsaw milling question

I am asking for a chainsaw mill for christmas so I will have the ability to make my own blanks for knife handles, turkey calls or whatever else my woodworking takes me into and am curious why most of the chainsaw milling I see they don't make a "cant" but rather just mill slabs off of the log?
 
On this forum there seems to be alot of folks including myself that like big live edge slabs, then other people prefer to make building lumber, fence boards and dimensional lumber. I don't think there is any special thing to the flitch cutting other than preference. I can always cut the live edges off the flitch and resaw the slab into smaller boards if I wanted.

I do think a chainsaw mill is the perfect tool for what you have in mind!

I agree several times in cutting firewood I have run across a figured piece of wood I wish I could cut up into something useful.

Very nice!! I also think that a CSM would serve your needs well.

Unless they are small regular shaped logs it is often not worth the significant effort required to turn the log compared to just taking the live edge off later with a circular saw.

These ornaments were hollowed out so they wouldn't weight the limbs down so bad.
