The only canoe hitch I've ever heard of is a type of half hitch slip knot. I've seen guys use it on rigging small limbs, ground man just pulls the tail to untie. Very quick. Not suitable for any type of climbing hitch or heavy work.
 
I believe he or you are mispronounceing the canute or however it is spelled. I heard of that.
 
I think it's the knut hitch. Do an archive seach for knut hitch. There are two ways it is shown I think the second way is the original knut. Both ways are self tending.
