I have a GB sprocket nose bar and i wont to drill a hole in the centre of the sprocket, what is the biggest hole without damaging the bearings ?.
So i can mount the bar to alaskan mill,to enable quick chain swop.

Theoretically you can drill it out as far as the rivets. In practice I would keep it away from the rivets.

The center of the bearing (which does not turn) is 1" diameter, so you can drill anywhere in there without hurting anything, though as Bob suggested, it's best to leave the rivits alone.
