what's the point of the cut off head's

You are limited to combustion chamber design and have to cut the piston to match the shorter chamber when raising compression with the stock jug.

When you have a custom head you can design a combustion chamber in any configuration you desire. Also you can make multipe heads and run different compression ratios.

It makes it easier to port also.

If you ever want good performance from a small block (Street Car) go with a head that has a heart shaped combustion chamber. You'll like the results.

Because the head is one of the most important aspects of a good runnign twop stroke. With a the stock non- removable head you are really limted in what you can do as far as quench areas, squish band angles, chamber CC, etc.
And shaping the piston isint the same thing as aa good head design. A pop up may actually inhibit combustion. The reason they work in a saw is that the increase compression.
