a 6-8 foot diameter Beech tree that snapped about 6-8 feet off the ground on 7/10.

I was going to get a logger to help down it.

My question is will this tree re-sprout? If so how high off the ground should I cut it.
(now cows have access to the area).

Yes; it has dropped 2 limbs before, they were 30 and 34".

So it is BIG and snapped and semi-hollow.

I might know exactly what it was after I cut it down. It is at the head of a spring, my dad wants it to regrow from the roots. I don't really think it will, so I prefer to cut it closer to the ground. He wants it cut 6 foot above the ground.

I can get help from a logger if I do it soon. A tree this size and with the top still resting on the stump is over my skill level.
