Deli-Style Roast Beef

Being on the edge of the middle of the middle of nowhere – If you want to eat something good, you have to make it yourself.

I haven’t had a Roast Beef sandwich this good since I can remember. Lots of recipes out there, and heating up the oven to 500 degrees was new to me, but the results are very satisfying.

I can't wait to get a real piece of meat. The Tri-Tip tappers so one part is well done and the other is medium rare. Still it is delicious!

Here's one I did a while back. Cooked to med/rare, sliced thin and piled high, there's not much better for sandwiches.
Cooking at 500* takes some getting used to. Until I read Barbara Kafka's cookbook, it scared me.
