I recently purchased a Stihl 075av and don't really know much about it I've been running a 066 for years but am wondering what size bar and chain including tooth pitch it would have come with originally if anyone can help me advance my knowledge base would be very much appreciated thanks

It should pull a bar longer than 36" just fine though

These should have all you need. IPL, Chain and Bar Manual, and Bar Chain Catalog 2018

Bar mount is 3003 same as your 066, so with proper/matching chain and drive sprockets, those bars should fit both saws.

I don't have a service manual. Go to beg for manuals thread , some one (@ray benson ) should have that.
