I'm going to keep 5-10 bundles outside "self serve" so want to build a shed for them.

Brainstorming on the shed. Short, not walk-in, maybe 3ft tall (Reach in a grav)?

Or 6-7ft tall and maybe 3ft deep so can walk in? Seems big for nothing, but I guess no weird bending and would attract more attention.

Let me hear thoughts. Thansk.
 
I'd go for a shallow, taller shed. You absolutely cannot have anything that a sue happy customer could bump their head on when grabbing a bundle.
 
Well, you have all those big trucks and everything, maybe a used backyard shed off of craigslist and just go grab it and tote it home. Cheaper and faster than building one, unless you are sitting on a pile of lumber already.

We run a sawmill so yes, plenty of lumber. Also have tin for the roof and a few dozen sheets of OSB laying around.

Yes pretty much. With some signs and a locked ammo can to put the money.

I only want to keep a small amount (which I can refill every couple days) just in case an unscrupulous person comes along.

I have been contemplating about getting one of those metal car ports to store wood under.
$675.00 installed for a 18x21 metal car port.
Leaving the sides and ends open will allow for good air flow.
You could get one that is fully enclosed. or enclose it later, since you have some sheet metal already.
You might consider a trail cam to monitor your bundles.
