Will White Birch stay "rot free" if I split the rounds in half and store them?

You'll be fine, esp since it's only for the short term. It's the unbroken "seal" of the papery bark that seals in the moisture. Once split, the wood is able to breathe.
 
I've noticed that the smaller white birch rounds (under say 6") do not rot inside the bark. Maybe the bark is too thin to be waterproof from the inside out. Otherwise, yes, split them.
