cutting down cypress trees

I have a project that i want to do and i have a perfect size cypress on my property that i want to cut down and get a saw mill to cut it into big enough pieces. my first question is, when is the best time of year to cut down a cypress tree? i know that pine trees transfer all their sap to the base of the tree in the winter, but does this apply to cypress?
 
the term is "the sap is up" or "the sap is down", far as I know all trees/perennials perform something similar in winter... however you have to actually have a winter... does it get cold enough in you're part of florida to freeze and stop growth as in do the leaves on deciduous trees turn colors and fall off? never been to Florida unless you count grand theft auto vice city...
 
but then to answer you're real question... the mill should know more about seasoning cypress, I think thats what you're getting at... they might even have a "kiln drier" that for an additional fee they can run you're boards through but don't expect any of this to be cheap! But with the kiln it doesn't matter when you cut them drying time is still a few days/weeks. Or saw em up and stack em on a pallet for the better part of a year under cover and wallah seasoned boards...
 
however you have to actually have a winter... your kidding right or you got to go and see the world i live in st pete beach and have had snow not to much wen its 35 thear is cold tis not like working in -8 but
 
big difference between Warshington, New York, and florida, some parts of florida have a growing season year round as in no winter, hence all the Florida Oranges.


The tree i want to use is located in southern Georgia, and yes they do have a cold and long lasting winter part. thanks for the info everyone. one last thing does anyone know of someone that can do chain saw art in Florida?
