Fresh-picked squash and a zucchini from the garden this morning...
Squash & Zucchini casserole

Pretty simple,
4-5 squash cut into pieces,
1 zucchini, grated
1 onion chopped and sautéed in butter
Put all in buttered baking pan, 9" x 13"
Season to taste (salt. pepper, whatever)
Pour over: 1/2 cup milk, 2 eggs, 4 oz. grated cheese
Sprinkle with crumbled Ritz crackers, about 6 oz. and another 4 oz. cheese
Bake 25-30 min. @ 350F

It is SO good! The Ritz absorbs the extra liquid and adds a little sweet taste to it.

Cooked another batch of my YG taters this morning - oven roasted with (store bought) onions and carrots in home-made game hen broth.
