I assume checking means cracking, now in the event of staining, is that to say the wood grain would become more pronounced, or the entire wood color may darken?

Its like BobL said; paint the ends QUICK! Hardwoods check differently than softwoods apparently, because I have often seen logs start to check badly in as little as a day or two if exposed to direct sunlight. Anchor seal recommends coating in less than 72 hours!! This is very important. The quicker you seal, the more lumber you will see.

The mills just started taking pine. The humidity is down and the cool nights should keep them from staining and the bugs away. They should be good for a couple of weeks. If you can store them in a place that doesn't get much sun will help the checking too.
