I have a 28" bar on it but wonder what's the largest bar that I could put on it (specifically for nice clean slices/cookies from downed logs and trees ranging from cottonwood to cherry to yes... oak.

I have at one time or another mounted a 30" bar on mine. It pulled it OK. My "standard" is a 28" bar. I'm not sure where you got a 27", but it could be the same as my 28". I have a 32" bar that I have not tried yet. The standard Echo CS-670 engine is surprisingly strong. It will almost run with my Stihl MS660 that has a much larger displacement.
