I am a chef in ST Louis Area. I am opening a restaurant in the spring that will be in need of steady supply of fuel wood for my ovens. I estimate 20-30 cord/year.

Looking for a supplier that can prove sustainable management and meet part or all of my needs.

your town or city is going to allow you to burn wood year 'round like that?
 
Sustainable management as in "certified"? I've seen certified lumber but never certified firewood.

No, I am looking for someone that I can trust as a supplier to be responsbile with the resource. Trust is the key not certification.
